Fritters taste best when they are crunchy and deep fried. So for firsts, prepare a batter that will consist of plain flour, corn flour, salt, finely chopped coriander and green chillies. Add all the flour with sparkling water and whisk it all for a thick batter. Chop cubes and big sized vegetables such as cauliflower, onions and potatoes. Dip them in the batter mixture and deep fry them in sunflower oil. It honestly tastes better with sweet chilli dipping sauce. So try and relish!
- Veg fajitas: This is spicy, delicious and easy! Certainly to satisfy your hunger pangs in the midst of those busy hours, try vegetable fajitas. Make simple pancakes, of gram flour or chick pea flour. Simply make the mixture of the flour and sparkling water, and keep the consistency medium. On a flat griddle, pour in the above batter and flatten it until it is even. For the filling inside, chop onions, corn, and one cauliflower in small florets, chickpeas that have drained and rinsed well, low fat yogurt and tomato puree or sauce. Mix them all up and sauté it in olive oil. Sprinkle finely chopped coriander, black pepper and salt for a cheery taste. Your filling is ready and can be placed in your flat pancakes.
